How To Make Panera Bread Broccoli Cheese Soup

Everyone loves eating at Applebee’s, Chili’s, McDonalds, T.G.I. Friday’s and Red Lobster. Many have a desire to cook these famous foods at home. When it comes to copycat recipes, some call it a hobby, some call it a science. Whatever you call it, the truth is, thousands of home cooks are having fun and saving time by recreating their favorite restaurant dishes in their home kitchen. Here is a great copycat recipe that tastes just like Panera Bread’s Broccoli Cheese Soup. I serve mine in bread bowls just like at Panera. Serves/Makes: 4
Ready In: 30-60 minutes
Ingredients:
1 tablespoon butter, melted
1/2 medium onion, chopped
1/4 cup flour
1/4 cup melted butter
2 cups half-and-half
2 cups chicken stock
1/2 pound fresh broccoli
1 cup carrots, julienned
1/4 teaspoon nutmeg
salt & pepper, to taste
8 ounces grated sharp cheddar
Directions:
Saute onion in butter. Set aside.
Cook melted butter and flour using a whisk over medium heat for about 4 minutes. Be sure to stir frequently.
Slowly add the half-and-half, continue stirring.
Add the chicken stock whisking all the time.
Simmer for 20 minutes.
Add the broccoli, carrots and onions. Cook over low heat until the veggies are tender, about 20 minutes.
Add salt and pepper.
By now the soup should be thickened.
Pour in batches into blender and puree.
Return the puree to the pot and place over low heat, add the grated cheese; stir until well blended.
Stir in the nutmeg.
Serve.

I absolutely love this recipe!! It tastes BETTER than paneras broccoli and cheese soup!! I’m going to the store right this minute to buy the ingredients so I can make it!

My husband and I went out tonight and bought all the ingredients to make this soup. I had 2 problems while cooking the soup. First, when you add the flour to the butter and whisk it,the butter totally soaks up the flour and clumps together. The directions say to whisk it for 4 minutes, which would burn it so I only did it for about a minute. Also, I added just a pinch of nutmeg at the end and it ruined the entire batch of soup. It tasted very nutty. It would have been a better soup if the nutmeg was omitted, but still not as good as Panera.

This soup was so bad. Warning to anyone. The comments say it is just as good as Panera. Obviously the people that left those comments have NOT eaten at Panera. This soup tastes nothing like Panera. After following all the directions it tastes like a bowl of creaming yellow nutmeg. I would give this soup from start to finish and the overall ingredients not even a half of a star…

I absolutely did not like this recipe. It did not taste nothing like panera. I would know I eat it several times a month. It had too much onion, and the nutmeg was gross. I’m sorry but the people that said this tastes just like panera, has never eating there. I dont even give it a star. So disappointed!!!
